Choosing duck by grade

Duck is not chicken. Fat distributes differently, and portion size depends heavily on weight window. We harvest in four ranges: 1.6–1.8 kg for personal portions, 1.8–2.0 kg for standard à la carte, 2.0–2.2 kg for mains, and 2.2–2.5 kg for family-style.
What the spec sheet reveals
Each delivery includes a one-page spec sheet: lot number, harvest date, actual weight distribution (mean, n, range), and yolk fan scores from sampling. Our yolk fan consistently scores 13–15. If you serve confit or magret, this is the number that drives presentation.
